Bilbao: Behind the Taberna

Pintxos culture is deeply embedded in the fabric of Bilbao. Found in bustling bars across the Basque Country, these small bites are typically enjoyed standing at the counter or perched at a ledge with a glass of Txakoli – a Basque speciality – sherry, or a cerveza in hand. They bring people together in a lively, informal setting where conversation flows as freely as the food. Pintxos are simple, flavourful, and always shared – designed to be eaten in a few bites before moving on to the next.
That tradition is at the heart of Legado’s Taberna. Inspired by the pintxo culture of Nieves’ hometown, the menu is designed for conviviality, with plates that are small in size but big in flavour. You’ll find a few local favourites – gildas of course, and a beautiful Champiñones & Prawn Pintxo – alongside a Nieves’ speciality, a rich Ox Tongue Burger on Pan de Cristal. Just like in Bilbao, the emphasis is on variety, rhythm, and balance: trying a little of everything, one plate flowing naturally into the next.
