Pintxos culture is deeply embedded in the fabric of Bilbao. Found in bustling bars across the Basque Country, these small bites are typically enjoyed standing at the counter or perched at a ledge with a glass of Txakoli – a Basque speciality – sherry, or a cerveza in hand.

Earlier this year, the Legado team travelled to Rioja to immerse themselves in one of Spain’s most celebrated regions and a great source of inspiration for Nieves.

Just a few months before opening the Legado team travelled to the heart of Andalusia and into the home of sherry – Jerez de la Frontera – and the birthplace of some of Spain’s most distinctive traditions.

Back in March, Nieves and the team travelled to Segovia – the hilltop town north of Madrid famed for its dramatic Roman aqueduct, fairy-tale Alcázar, and one of Spain’s most iconic dishes: cochinillo asado, or roast suckling pig.
